Once July hits, it's harvest time around here. Every day there is something new to bring in from the garden and it is just so exciting! This morning the blueberries that I have been watching all week (as have the robins!), turned blue and were ready for harvesting. A couple of bowls later I had blueberry pancakes on the griddle topped with pure maple syrup and, you guess it, more blueberries!
Sunday Morning Blueberry Pancakes
2 eggs, separated
1 1/2 cups sifted all-purpose flour
2 1/4 teaspoons baking powder
3 tablespoons sugar
3/4 teaspoon salt
Few gratings of nutmeg
1 cup whole milk
3 tablespoons butter, melted
1 cup fresh blueberries
In a small bowl, beat egg whites until stiff; set aside. In a separate bowl, sift together flour, baking powder, sugar, salt and nutmeg; set aside. Beat egg yolks in a medium mixing bowl; whisk in milk and melted butter. Stir egg mixture into dry ingredients; mix until batter is smooth; stir in blueberries. Fold in beaten egg whites. Makes 10-12 pancakes.

ReplyDeleteA big pot is the key, Valeree. Mine is about 24" W x 28" H. They also like a lot of water and are acid lovers, so I put coffee grounds around them. I've underplanted mine with cranberries. The plants are doing well and come back every year, but I have yet to see a single cranberry.
ReplyDeleteThere is nothing better in the summer than blueberry pancakes with fresh blueberries!!!!! A friend grows hers in pots with peat moss only -- no soil and she harvests tons of blueberries!!

ReplyDeletePattie, I wish I could have been at your house this morning. Pancakes look delicious! I've been putting pine straw around my blueberries, but thanks for the hint about the coffee grounds. I can put them on blueberries as easily as in the compost.

okay I'm so doing this next year...I had no idea you could grow a blueberry bush in a pot! How do you control the acidity in the soil? ...or maybe I should just get the book you recommended
ReplyDeleteThe book is a great one, Abby. You'll be amazed at all you can grow in pots, including corn! Plus the pictures and displays make the vegetables look attractive in their planters rather than overgrown and weedy. I use miracid and coffee grounds to control acidity.

ReplyDeletePatty, not sure if you really needed an answer.... I guess the plant sends out males first so they will be there and waiting when female blooms. Mine sent out males for almost a month before and females showed up! I unfortunately only got to enjoy three zucchini and a couple of small pumpkins before a vine borer got my plants. I tried so hard to save them! Hope you get some girls soon! Gardens are so fun, yes?
