Against my better
judgment, I participated in a craft show over the weekend. It was wretched.
Poorly organized, dimly lit, sparsely attended, it was punishment! The only
saving grace was having a friend participate as well. She was in the booth next to
mine, so we could share our misery. The saving grace for her was the nearby
bake sale and the smell of pumpkin wafting through the room. As I watched her booth
on the off chance that a customer might wander by (no luck there), she bought
loaves of pumpkin and lemon poppy seed breads, and dug into them ravenously upon her
return. She said that she had been craving pumpkin for weeks. From that moment
on, I started craving pumpkin as well, so this morning, I cracked open the Bobby
Flay brunch cookbook for inspiration, and made these pumpkin walnut pancakes.
Because I felt I needed a treat, I topped them with what remained of the Bourbon Sauce
from the bread pudding. Oh, my! This is what I call breakfast!
Pumpkin Walnut Pancakes
1 1/4 cups
all-purpose flour
2 tablespoons sugar
2 teaspoons baking
powder
1/2 teaspoon salt
1/2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. ginger
1/4 tsp. freshly grated nutmeg
1/4 tsp. cloves
1 Tbl. candied ginger
1 1/3 cups whole milk
1/4 tsp. ginger
1/4 tsp. freshly grated nutmeg
1/4 tsp. cloves
1 Tbl. candied ginger
1 1/3 cups whole milk
3/4 cup canned pumpkin
1 Tbl. molasses
4 large eggs,
separated
1/4 cup (1/2 stick)
unsalted butter, melted
1 teaspoon vanilla
extract
1/2 cup walnuts, roughly
chopped
Whisk flour, sugar,
baking powder, salt, and spices in a large bowl to blend; set aside. Whisk
milk, pumpkin, molasses, egg yolks, melted butter, and vanilla in medium bowl
to blend well. Add pumpkin mixture to dry ingredients; whisk just until smooth.
Fold in walnuts. Using an electric mixer, beat egg whites in another medium
bowl until stiff. Fold whites into batter. Pour batter by 1/4 cup onto lightly oiled
griddle. Cook until bubbles form on surface of pancakes and bottoms are brown,
about 2 minutes per side.

Yum!! I love sweet potato pancakes, so I know I would love these (although I would slather them with butter till it was dripping along with the syrup).
