Angel Chicken


Some days are just meant to be Crock Pot days.  You know the ones, when you are frantically busy, wondering how you're going to manage to get through even a quarter of your To Do list before collapsing in a heap, your head resting alongside a bag of greasy take out. Today was one of those days. Thank goodness I remembered Midwest Living's article on 21 Favorite Chicken Slow Cooker Recipes. I started at the beginning of the list with Angel Chicken. Wow, easy and delicious. I'm a mushroom fan, so added more than the recipe called for, but my guess is that, if you don't care for mushrooms, this dish would be just as delicious without them.  


Angel Chicken

4 skinless, boneless chicken breast halves (about 1-1/2 pounds)
1 8-oz. pkg. fresh button mushrooms, quartered
1 6-oz. pkg. fresh shiitake mushrooms, stems removed, caps sliced
1/4 cup butter
1 0.7-oz. pkg. Italian dry salad dressing mix
1 10-3/4-oz. can condensed golden mushroom soup
1/2 cup dry white wine
1/2 of an 8-oz. tub cream cheese spread with chives and onion

Hot cooked rice or angel hair pasta

If you like, brown chicken on both sides in a large skillet in hot oil over medium heat. (This isn't optional, as far as I'm concerned. Searing chicken for 2-3 minutes on a side before placing it into the Crock Pot makes for juicier, tenderer meat.) Combine mushrooms in a 3-1/2- or 4-quart slow cooker; top with chicken. Melt butter in a medium saucepan; stir in Italian dressing mix. Stir in mushroom soup, white wine, and cream cheese until melted; pour over chicken.

Cover; cook on low-heat setting for 4 to 5 hours.

Serve chicken and sauce over cooked rice (I used a nest a Capellini, finding it lighter than a pile of rice.). Sprinkle with chives, if you like. Makes 4 servings.

  1. Good Evening Pattie, It is lovely to catch up with you again. This recipe is certainly something I am going to make, for those days when I am rushed off my feet. I have to say, your photo is fabulous, I feel as if I could just reach for a knife and fork and enjoy the meal.
