Boursin Pasta con Broccoli

6 oz. orecchiette pasta(or any short pasta you love)
2 c. fresh broccoli florets
1 (5.2-oz) package Boursin Shallot & Chive cheese
½ c. heavy cream
Pinch of salt
¼ t. freshly ground black pepper

Bring a large pot of well-salted water to a boil. Add the orecchiette and cook according to package directions until al dente.

During the last 2-3 minutes of cooking time, add the broccoli florets to the pot with the pasta. This saves you an extra pan and keeps things simple!

While the pasta cooks, warm the Boursin cheese and heavy cream in a large skillet over medium heat. Stir gently until the cheese fully melts into a silky, creamy sauce.

Using a spider strainer or slotted spoon – stop draining pasta! –, transfer the cooked pasta and broccoli directly from the pot to the skillet. The starchy pasta water clinging to the noodles will help thin and smooth the sauce perfectly.

Toss everything together until beautifully coated. If the sauce feels too thin, let it simmer for a minute or two to thicken. Season with salt and black pepper to taste.

Salmon Baked in Pesto Cream

2 t. olive oil
2 salmon fillets
Kosher salt, to taste
Freshly ground black pepper, to taste
1 T. butter
½ c. chicken broth
¼ c. basil pesto
½ c. heavy cream
¼ c. Parmesan cheese

Preheat oven to 400°F.

  Rub the salmon fillets all over with olive oil. Season generously with kosher salt, freshly ground black pepper, and Italian seasoning.

In a large oven-safe skillet, melt the butter over medium-high heat. Add the salmon fillets and brown for 1-2 minutes per side. Transfer to a plate and cover to keep warm.

In the same skillet, add the chicken broth, stirring to deglaze the pan. Mix in the basil pesto, heavy cream, and Parmesan cheese. Season with additional salt and pepper to taste.

Return the salmon to the skillet, spooning some of the sauce over the fillets. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and the sauce is thickened and bubbly.

Spoon the creamy pesto sauce over the salmon and serve immediately. Pair with your favorite sides for a complete meal.

 1 1½-lb. sirloin steak

Smoked paprika

2 T. butter

Garlic salt, to taste

10 oz. water

1 t. Jameson Beef Soup Base

1 large yellow onion, sliced thin

1 large red bell pepper, sliced thin

2 T. cornstarch

¼ c. brewed coffee

1/2 T. brown sugar*

2 T. soy sauce

2 T. low-sodium soy sauce

 Slice sirloin into ¼ inch strips and sprinkle with paprika. (It helps, I think, to have the steak partially frozen for easy slicing.) Melt butter in a 10” skillet over medium high heat.

Brown meat in butter; sprinkle with garlic salt and slowly pour in water and beef soup base. Cover and simmer for 30 minutes.

Slice onion and pepper into thin strips. Add to meat and simmer for 5 minutes. Mix cornstarch, coffee, brown sugar (if using), and soy sauces, and add to meat mixture. Simmer until sauce thickens slightly, 1-2 minutes. Serve over noodles or rice. Makes 4 servings.

*I like my pepper steak with a touch of sweetness. If you don’t, leave this out.

I can hardly believe I’ve gone from a novice to making salmon weekly! This baked salmon with pesto butter sauce is my go-to for a fast, delicious meal that’s even company-worthy. While the original recipe from The Art of Jacques Pépin uses store-bought pesto for simplicity, I prefer using my homemade pesto, which I keep stocked in the freezer. It’s just as quick but adds a fresher, more vibrant flavor—and it’s more budget-friendly, too. The pesto butter sauce is so versatile that I even used it on last week’s air fryer salmon, and it was a hit! This dish is perfect for busy weeknights when you want something tasty without the fuss.
Baked Salmon with Pesto Butter Sauce

2 skinless salmon fillets (about 5 oz. each)

¼ t. salt

¼ t. freshly ground black pepper

1 t. olive oil

1 T. butter, melted

2 T. basil pesto (homemade or store-bought)

Basil sprigs, for garnish

  Preheat your oven to 350°F and line a small baking sheet with aluminum foil.

Place the salmon fillets on the baking sheet. If one end is thicker, tuck the thinner belly portion underneath for even cooking. Sprinkle with salt and pepper, then drizzle with olive oil.

Bake for 6 to 8 minutes, or until the salmon is cooked to your preference. 

In a small bowl, mix the melted butter and pesto to create the sauce.

Transfer the salmon to a platter or individual plates, spoon the pesto butter sauce over the top, and garnish with basil sprigs. Serve immediately.
