Meal Plan Monday #9 Slow Cooker Week


I don’t have a lot of time to cook this week, so I have designated it to be slow cooker week. All of the meals that I’m having are going to be made in the slow cooker. I do love a good meal, but I also love easy. This is a perfect combination of both.

Monday – Porcini Chicken, mashed potatoes, salad

Tuesday – Slow Cooker Melt-in-Your-Mouth Meatloaf, potato pancakes (from leftover mashed potatoes), green beans

Wednesday – Crockpot Butter Chicken, rice

Thursday - leftovers


Friday – Chinese Beef and Bok Choy, leftover rice (from Wednesday)

Saturday – Chicken Enchilada Soup, Beer Bread

Sunday – Slow Cooker Salisbury Steak, mashed potatoes, peas

I love my crockpot - its a Cuisinart and you can program it to cook for as long as you like, then it keeps the food warm for another 3 hours. Very handy. I am doing much the same this week, starting today with stew.

You may not have much time to cook, but you manage to make everything look and sound so good. The porcini chicken with mashed potatoes is making my mouth water (I just finished my cereal bar for breakfast - lol!)

Sounds like a yummy week! I love it when the slow cooker has done the work for me! The butter chicken sounds amazing, I must try that!
