Café Sua Da (Vietnamese Iced Coffee Ice Cream)


I don’t know about you, but I love coffee. I mean, I REALLY love coffee. The first thing I do in the morning, my eyes barely open, is hit the button on the coffee grinder, and start filling the coffee maker with filtered water. My day doesn’t start without it. I like coffee in the morning before breakfast, in the afternoon with a cookie or two (or four if you must know), baked into fudge, cakes, used in barbecue sauce, as a rub on pork chops and steaks, and in this delicious Vietnamese Iced Coffee Ice Cream. Easy, festive, and a special treat for your friends over the holidays, make it now and store it in the freezer. I have an ice cream maker, and recommend everyone have one because they are so versatile, but if you don’t, you can easily pour this into a loaf pan and freeze it, and scoop your ice cream from there.
Café Sua Da (Vietnamese Iced Coffee Ice Cream)
Adapted from Cafe Fernando and David Lebovitz

1 cup espresso or very strong coffee
1 cup sweetened condensed milk
1/3 cup heavy cream or whole milk
Pinch of coarse ground coffee

Whisk to combine all ingredients in a medium bowl. Chill until cold, and then process in your ice cream maker according to the instructions.

Under the Weather


In case you are wondering what has happened to me, I am heading into my second week of a cold/flu/plague. I hope to be better soon, but then night after night I hope to be better the following day, and that has yet to happen. Just an update.

Mango Pops



Is it hot where you are, because, boy howdy, it is hot here! Today we're supposed to top out at 98ºF with heat indices around 110ºF. That's hot. And when it gets to be this hot, I don't want to spend a lot of time in the kitchen. Today I put some ripe fruit and my Njnja blender to use to make these nutritious and refreshing mango pops. They are so easy to make, and a real pleasure to eat on a hot day. Because they are little more than fruit and yogurt, let your kids have one for breakfast. You'll be the most popular mom on the block.

Mango Pops

Melissa's Ataulfo mangoes
1 cup Greek yogurt, plain or flavored (I used Chobani Mango)
1/2 cup freshly squeezed orange juice
Zest of one orange
1 tablespoon honey (more or less to taste, it really all depends upon the sweetness of your mangoes)

Peel and pit mangoes.  Cut the mangoes into large chunks and place them, and the remaining ingredients, into a blender or food processor and blend until smooth. If it seems too thick, add a bit more orange juice. Pour into Popsicle molds, and freeze until hard.

Frosty Café Mocha


I use ice cube trays for many things.  Making ice isn’t one of them.  As I showed you here, it is an excellent way to keep citrus zest (along with premeasured quantities of freshly squeezed citrus juice).  I also make coffee ice cubes out of any coffee that is left over in the pot (on the very rare occasions that this happens) in order to have them on hand to make one of my favorite summer drinks, Frosty Café Mocha.  It’s not as highly caloric and decadent as you may think.  Using a blender and the coffee ice cubes is what gives it its thickness and froth.  The addition of chocolate and sugar, and their respective quantities, is up to you.


Frosty Café Mocha
(Makes 1 serving)
 
 5 coffee ice cubes
½ cup milk
1 tablespoon chocolate syrup
1 tablespoon simple syrup*

In a blender (I use a Rocket Blender), combine coffee ice cubes, milk, chocolate syrup, and simple syrup.  Blend until smooth, adding additional milk, if necessary.  Top with a drizzle of chocolate syrup and a chocolate covered espresso bean.

 
*Simple Syrup
½ cup sugar
½ cup water

In a medium saucepan combine sugar and water. Bring to a boil, stirring, until sugar has dissolved.  Allow to cool.  Measure out and use as you like, store remainder in the fridge.
