Mango Margarita



In the same way in which Memorial Day kicks off summer, Cinco de Mayo kicks off Margarita Season. Not an actual season, you say? Well, I beg to differ! The Margarita cocktail is best enjoyed during the heat of summer. It can be created in endless variations, and enhanced by the fresh fruits of the season; strawberries, blueberries, melons, kiwis, mangoes, you name it, they can all find their way into a freshly crafted margarita, and doesn't it do your heart good to know that you're also getting one of your daily servings of fruit?

I am crazy about mangoes, so today I am featuring a recipe for the Mango Margarita.  It is really easy to throw together and this recipe amply serves one. I tossed everything into my little bullet blender, and in no time was sipping on pure bliss. This will double, triple, or quadruple if you feel like sharing, if not, enjoy it on your own, ideally with some crispy chips and freshly made guacamole.


Mango Margarita

1 mango (I used a Melissa’s Ataulfo mango), seeded, peeled and chopped
1 cup Jose Cuervo bottled Margarita Mix
1/3 cup Tequila
1 teaspoon freshly squeezed lime juice
3-4 ice cubes

Rub the rim of the glass with the cut lime and coat with salt.

Place all ingredients into a blender or food processor (a small one, if you have it) and whir until smooth. Pour into a glass, put your feet up, and enjoy.

I can almost taste these. My son is the margarita maker in our family and made me fresh strawberry margs for Mother's Day. I'm going to ask for mango next time!
