In an old episode of
“Seinfeld” (Can you
believe it has been twenty fivc years since that show first aired?!) George and
Jerry are having a conversation at Monk's diner when George states that salsa
is the number one condiment in America. Jerry postulates that it's because
people love to say “salsa.” While that may be
true (It is fun, try it...SALSA) I think it is popular because it is fresh,
delicious, and so diverse.
I have spent the last week making a variety of
salsas and have loved every one of them. Lots of recipes are to come, but the
one that I thoroughly enjoyed last night was fresh pineapple salsa. I'd made
it initially to serve on top of salmon
cakes, but found that I liked it so much
better when served atop the accompanying rice pilaf. It brightened the rice and
made it so fresh and flavorful. I had it on top of rice that was warm, but
thought that it would probably make an excellent side salad if stirred into
chilled rice.
It's also good when scooped up with a chip, and simply amazing
when scooped up with one of those Stacy's Cinnamon Sugar Pita Chips (that I was
recently introduced to and cannot stop eating), in which case this salsa that
can be thought of as a dip, salad, and condiment, can also be thought of as
dessert. Wow, now that is versatile. It's also healthy. Go make some!
Pineapple Salsa
1 cup fresh pineapple (I used one entire Melissa’s
Baby Pineapple – they are so cute!), finely diced
6-8 Melissa’s Heirloom Cherry Tomatoes, seeded and cut into 1/4-inch dice
1/2 cup chopped red pepper
1/2 cup chopped sweet onion
1/4 cup chopped fresh cilantro
1 fresh jalapeno chile, seeds removed, minced
2 tablespoons fresh lime juice
2 tablespoons fresh orange juice
2 tablespoons extra-virgin olive oil
Stir all ingredients together and season with salt (Yes, salt! Do not omit this!)
6-8 Melissa’s Heirloom Cherry Tomatoes, seeded and cut into 1/4-inch dice
1/2 cup chopped red pepper
1/2 cup chopped sweet onion
1/4 cup chopped fresh cilantro
1 fresh jalapeno chile, seeds removed, minced
2 tablespoons fresh lime juice
2 tablespoons fresh orange juice
2 tablespoons extra-virgin olive oil
Stir all ingredients together and season with salt (Yes, salt! Do not omit this!)

I've always intended to make a fruit salsa, and not only does this one look good but the ingredients sound perfect. Thank you for insisting on the salt! :) Why have you been making lots of salsa?
