For the Salad:

4 c. Melissa’s organic broccoli, chopped into bite-size pieces

3 c. Melissa’s colorful cauliflower, chopped into bite-size pieces

1 large Melissa's Honeycrisp apple, diced

½ c. diced red onion

2 celery ribs, diced

⅓ cup thinly sliced scallions (about 3)

1 3-oz. pkg. Melissa’s dried cherries

½ c. crumbled feta cheese

⅓ c. pumpkin seeds

⅓ c. sunflower seeds

For the Dressing:

¾ c. Duke’s mayonnaise

¼ c. extra-virgin olive oil

3 T. fresh lemon juice

2 t. honey

1 t. garlic powder

½ t. fine sea salt

¼ t. freshly ground black pepper

In a small bowl, whisk together mayonnaise, olive oil, lemon juice, honey, garlic powder, salt, and pepper until smooth, about 2–3 minutes. Set aside.

In a large bowl, combine broccoli, cauliflower, apple, red onion, celery, green onions, dried cherries, feta cheese, pumpkin seeds, sunflower seeds, and almonds. Toss to mix evenly.

Pour the dressing over the salad and toss until everything is well coated.  For best flavor, cover and refrigerate for 30 minutes to let the flavors meld.

 Serve chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 4 days.

I’m a huge fan of cruciferous veggies, and coleslaw is a go-to in my kitchen, but I was bored with the same old recipes. So, I swapped out regular cabbage for Melissa’s Napa cabbage and Melissa’s red cabbage, creating a colorful, crunchy masterpiece. Paired with a super simple dressing that’s blended to perfection with an immersion blender, this coleslaw is a game-changer. The secret? The dressing incorporates a Melissa’s shallot, blended right in, ensuring every bite is coated with zesty, tangy flavor. This vibrant slaw is as gorgeous as it is delicious—perfect for BBQs, picnics, or a fresh side dish any day!
  
Tangy Napa-Red Fusion Slaw

¾ c. avocado oil
¼ c. cider vinegar
1 t. celery seed
1 t. dry mustard
1 t.
celery salt
3 T. honey

 1 Melissa’s shallot, roughly chopped
½ head
Melissa’s Napa cabbage, thinly sliced
½ head Melissa’s red cabbage, thinly sliced

Combine avocado oil, cider vinegar, celery seed, dry mustard, salt, honey, and shallot in a bowl.  Using an immersion blender, blend until smooth and creamy. Toss the dressing with thinly sliced Napa and red cabbage until evenly coated.
 

Serve chilled for maximum crunch and flavor.

Fresh and Vibrant Israeli Salad

 
If you’re craving a dish that’s light, refreshing, and bursting with flavor, look no further than the Israeli Salad. Ready in under 20 minutes and packed with nutrient-rich vegetables and heart-healthy olive oil, this iconic dish is a cornerstone of Israeli cuisine, celebrated for its simplicity and vibrant ingredients. Known for its finely chopped vegetables and zesty dressing, Israeli salad is a versatile side dish or breakfast staple, often enjoyed with warm pita, falafel, or shawarma.

The beauty of Israeli salad lies in its adaptability and ease of preparation. Whether served at room temperature for maximum flavor or chilled for a refreshing bite — I prefer mine chilled — , this salad is perfect for any occasion—be it a summer barbecue, a casual lunch, or a healthy snack.

Israeli Salad

For the Salad:
1 lb. cucumbers, diced
1 lb. fresh ripe tomatoes, seeded and diced
1 pkg.
Melissa’s mini peppers
½ c. minced fresh parsley

For the Dressing:
2 T.
extra virgin olive oil
Juice of 1 lemon
¼-½  t.
kosher salt

Slice each cucumber in half lengthwise. Cut each half into 2 long, thin strips (4 strips total per cucumber). Dice them into small pieces. If you prefer a seedless salad, scoop out the cucumber’s seed-filled center before dicing. Place the diced cucumbers in a large mixing bowl.

Remove the stem end of your mini pepper, slice it in half, and slice each half into 3-4 thin strips. Dice those strips into small pieces.

To the bowl, add the diced tomatoes, and minced parsley.

In a small bowl, whisk together olive oil, lemon juice, and kosher salt until emulsified.

Drizzle the dressing over the vegetables. Toss gently until everything is well coated.

Serve immediately at room temperature for the best flavor, or chill for 15–20 minutes for a refreshing twist. Enjoy as a side dish, stuffed in a pita, or on its own!
