Strawberry Rhubarb Cobbler


Last week I told you about Magpie Restaurant on Historic Main and their delicious Asparagus Soup.  If you missed out on that post, you can read it here.  This week I am featuring another charming eatery in Saint Charles, Missouri called Miss Aimee B’s Tea Room and Marketplace.  Every time I go I find at least one thing, oh, who am I kidding?  More like ten things that I want to buy.  I am still thinking about the French flower bucket that really called my name so I may just have to go back this week, but I digress.  The restaurant and shops are contained within the walls of the wonderful Marten/Becker House, a Historic Home built in1865 by Francis Marten, now on the National Register of Historic Places.  Their food is tasty, the desserts divine.

Now, as you know, if you’re paying attention, until recently I was a rhubarb virgin.  Yep.  True, and I’m not ashamed to admit it.  But since then everything has changed.  First I made this jam; secondly I tasted Miss Aimee B’s Strawberry Rhubarb Cobbler.  Why did I wait so long to fall in love with rhubarb?  Fortunately for you Miss Aimee B’s has a cookbook, in fact, THREE of them, all with recipes for customer’s favorites, including the cobbler, so I am sharing this recipe with you.  It is very easy and enormously delicious.

Strawberry Rhubarb Cobbler

5 cups frozen rhubarb, chopped
2 cups sliced strawberries, half fresh & half frozen
1 ½ cups self-rising flour
2 ½ cups granulated sugar
1 ½ cups milk
1 ½ tsp. almond extract
1 stick unsalted butter, melted

Preheat oven to 350°F.  Spray a 13 x 9 pan with PAM.  Place the rhubarb in the bottom of the pan, topped with the strawberries.  Combine flour, sugar, milk, and almond extract.  The dough will be lumpy.  Pour over the fruit.  DO NOT STIR.  Pour the melted margarine over the dough.  Use a tooth pick to swirl margarine into the dough.  Bake at 350°F for 1 hour.  Serve warm or cool with a scoop of vanilla ice cream or dollop of whipped cream or vanilla yogurt.

Yield:  12 to 16 servings.

Pattie~ Your Strawberry Rhubarb Cobbler looks wonderful and so easy! I'm still a rhubarb virgin, this is a delicious way for me to change that!

It's crazy that I have lived in Missouri nearly all my life and STILL have never visited St. Charles! I just really don't get out that much! :-( When my Mom served in the MO. legislature, she visited Magpie's when in St. Charles and really liked it. Coincidentally, my Mom LOVES strawberry-rhubarb pie (she just talked about making one the other day), so it's too bad she didn't make it to Miss Aimee B's. I'm sure she would have been in hog heaven. I'm going to send her the link to this post so she can give this recipe a try when she snags some rhubarb.

I went and visited that post (I have been out of town), and I think you need to go back and get that French flower bucket. Do it. Do it. Do it. If you are still thinking about it, it needs to come live with you and make you happy! :-)

I've probably asked you this before, but are you from Missouri? Or just visiting? It is one of my all-time fave places. My mother was raised in Hartville, and I have wonderful memories of visiting there and eating Granny's delicious gooseberry pie. I mention gooseberries because rhubarb reminds me a little of them, tart-wise. Anyway I saw this last night and had to go to the store today buy strawberries to make it. Forgot the rhubarb. :( So I'm making a buttermilk cake for the strawberries. But I still want to make your cobbler. I love the instructions: "use a toothpick to swirl" lol!

My husband has wanted a strawberry rhubarb pie since we got married 21 years ago and I never did make him one - I like rhubarb but never cooked with it. bad wife eh? Well, this recipe looks awesome, and I am going to make it this weekend for him. We're on a diet so can't have too much, but with my family, I'm sure it won't last long anyway. Looks and sounds really delicious!

Oh my, this sounds delicious and easy to make! I am not sure what rhubarb is but I'm guessing some sort of turnip green? I haven't seen it in stores in Louisiana but I am wondering if I can find some at our local fruit stand or something. I'll have to see soon.
