Pesto for the Resto


Let me begin this post by saying that I haven't been getting a lot of sleep. As a consequence, I have days where I am absolutely goofy from the lack of it. This afternoon while I was making this pesto, I started thinking about Jerry Seinfeld (Please don't ask me why pesto made me think of him, I have no explanation for that.), specifically about the episode on the generic holiday called "Festivus" ("for the rest of us"). 

Because this pesto is made with toasted walnuts (as I am not a particular fan of pine nuts in pesto and surely am not alone), I thought that this should be referred to as "Pesto for the Resto." (Lack of sleep. I warned you.) I don't think anything beats toasted walnuts in pesto, despite pine nuts being traditional. They have such an earthy, woodsy, warm taste that so beautifully enhances the fresh basil. Try it and you will surely agree.

Pesto for the Resto
¼ cup garlic cloves
1/3 cup walnuts, toasted
1/4 cup grated Parmesan cheese
4 ounces fresh basil leaves
½ cup olive oil
¼ - ½ teaspoon kosher salt
¼ - ½ teaspoon freshly ground black pepper
1-1/2 teaspoons freshly squeezed lemon juice

Place garlic and walnuts into the work bowl of a food processor and process until blended. Add cheese and basil and process until combined. With machine running, slowly drizzle in olive oil. Lastly, add salt, pepper, and lemon juice, and pulse to combine. Keeps in the fridge for two days, freezes for 2-3 months.

Salsa!



When I say the words salsa dancing, you probably have an entirely different idea as to the meaning than I do. You are probably thinking about an energetic dance with Latin American influences. Me? I'm talking about the happy dance that I do every time I make one of these delicious salsas. In my case, it can be a jig, skip, waltz, or sashay, sometimes accompanied by song, sung slightly off key. Whatever you do to express joy when creating something zippy and flavorful, enjoy it to the hilt when you make one or all of these flavorful dips (or side dishes -- Truth be told, I have been known to skip the chips and eat these with a spoon, but keep this to yourself.).

Pineapple Salsa



In an old episode of Seinfeld (Can you believe it has been twenty fivc years since that show first aired?!) George and Jerry are having a conversation at Monk's diner when George states that salsa is the number one condiment in America. Jerry postulates that it's because people love to say salsa. While that may be true (It is fun, try it...SALSA) I think it is popular because it is fresh, delicious, and so diverse. 

I have spent the last week making a variety of salsas and have loved every one of them. Lots of recipes are to come, but the one that I thoroughly enjoyed last night was fresh pineapple salsa. I'd made it initially to serve on top of salmon cakes, but found that I liked it so much better when served atop the accompanying rice pilaf. It brightened the rice and made it so fresh and flavorful. I had it on top of rice that was warm, but thought that it would probably make an excellent side salad if stirred into chilled rice. 

It's also good when scooped up with a chip, and simply amazing when scooped up with one of those Stacy's Cinnamon Sugar Pita Chips (that I was recently introduced to and cannot stop eating), in which case this salsa that can be thought of as a dip, salad, and condiment, can also be thought of as dessert. Wow, now that is versatile. It's also healthy. Go make some!
Pineapple Salsa


 1 cup fresh pineapple (I used one entire Melissa’s Baby Pineapple – they are so cute!), finely diced

Melissa’s Heirloom Cherry Tomatoes, seeded and cut into 1/4-inch dice
1/2 cup chopped red pepper
1/2 cup chopped sweet onion
1/4 cup chopped fresh cilantro
1 fresh jalapeno chile, seeds removed, minced
2 tablespoons fresh lime juice
2 tablespoons fresh orange juice
2 tablespoons extra-virgin olive oil

Stir all ingredients together and season with salt (Yes, salt!  Do not omit this!)
